It’s that time of year again! Red White and Blue, we love you America. I know times are unusual, but the fact remains our great nation is the land of hope, opportunity, and so much rich history. I am grateful to be American and have the wonderful life I’ve been afforded.

The 4th is around the corner and our annual city/town parade is cancelled so we are moving our celebration east. We will gather and honor our country with food, a kids bike parade, fun, and lot fireworks. What can I say – I like the colors, songs, and the tradition!
So the first recipe I’m sharing from our 4th celebration is Queenie’s Breakfast Casserole. See below!
Serves 8 – 10 people
Ingredients
- 6 eggs
- 1/2 c flour
- 1/8 t salt
- 6 T butter
- 1 t baking powder
- 1 c milk
- 1 3oz cream cheese
- 1 8oz small curd cottage cheese
- 2 pkgs 1 1/2c grated Monterrey Jack
- 1 pkg 2 c grated mild cheddar
- 1 lb Jimmy Dean sausage cooked crumbled and drained
- 1 bunch green onions, chopped
- dash of paprika
Instructions:

In a large bowl beat eggs well with wire whisk or mixer. Add flour, baking powder, and milk to the bowl. Cut cream cheese into small cubes and set aside. Add the grated cheeses along with the cooked sausage, salt, green onions, and if desired mushrooms to the bowl. Give the mixture a quick mix. Grease a 9 x 13 casserole dish and pour mixture into dish. Drop cut cream cheese evenly through the dish. Dot with butter on top and sprinkle with paprika. ***Cover and refrigerate overnight. This helps it cure and become ready to bake.***Next day, bring to room temperature and bake at 350 degrees for 40 mins or until bubbly.

This is seriously so good and very savory! We normally serve this up with the best Bloody Mary’s in town. I will be sharing this recipe tomorrow so stay tuned!
The casserole tastes delicious hot, warm, and cold. Whatever you fancy the dish is ready to serve. We cut into squares for individuals to serve themselves. I don’t feel any additional seasoning is necessary. I love salsa and add for my tastebuds!
